Bacon Brioche French Toast with Fuji Apples and Maple Syrup

I'm Back!!!!!

I just got back from a 3 week Northern California Art Car Road Trip (Here is a link to a video of my trip) and thought I would share some of the greatest food experiences and microbrewery tastings I was able to partake in!

I didn't do the big fancy pants restaurants on this trip, I kept it more down home, local neighborhood roots restaurants, Famous Portland Food Trucks and rare home-made yummy fun things....

Here is one of my favorite restaurants on my journey!

everyday from 9 to 11pm.

When it’s too late to go home early… Rotating exhibits by local artists adorn our walls with each new menu and don’t forget to make a stop by the powder room for a little "potty humor" written and recorded inspired by our creative staff. Everything on this menu looks outstanding, the prices are reasonable, the place feels comforting, clean and fun.  I just was there for breakfast, GREAT COFFEE!
Here are a few items from there menu, I ordered the highlighted one, ONE OF THE BEST THINGS I HAVE EVER EATEN.

Breakfast
Mistral Tart        4.25
Strawberry compote and goat cheese tart with an accent of thyme honey.

Roasted Porc Hash          12.50
Saffron crème fraiche and two eggs over easy served over pommes frites, herbes de provence rubbed tenderloin, caramelized carrots, roasted garlic, leeks and red chard. Or order eggs as you like ’em.

Ratatouille Omelette    11.50
Oven roasted zucchini, squash, eggplant, tomato and pepper in a tri-fold omelette with goat cheese. Alongside crispy truffle oil potatoes and fresh sliced strawberries.

Pan de Pain Perdu           10.25
Macrina brioche dipped, skillet-baked with bacon, Fuji apple and eggs. Sizzlicious with pure maple syrup.  AMAZING!!!!!!!!!

Imagine, brioche bread baked with bacon inside it, dipped in an egg wash and made into french toast, then toasted so it is crunchy on top and covered in thinly sliced Fuji apples, and strawberries, with a sprinkle of powered sugar. Served with pure warmed Maple syrup.....DIVINE.  I am going to see if they will give me their recipe.....
