Amazing Grilled Cheese Corn on the Cob


It's BBQ weather and corn is back!  You can get 6 ears for $2.00 at the store this week.  Here is a kick ass thing to do to them!  I have tried this several ways, but this recipe is the easiest and yummiest. Creamy, spicy, fresh crunchy.....Fabulous!!!!!


INGREDIENTS: 
1 cup mayonnaise
6 ears corn, husk and silk removed
1½ cups fresh grated Parmigiano Reggiano cheese
½ teaspoon Hot Smoked Spanish Paprika
½ teaspoon ground Cayenne pepper
1 teaspoon honey

COOKING MUSIC SELECTION:  Hazel Dickens - Fire in the hole

PREPARATION:
Fire up your grill to medium heat and then husk and clean the corn cobs so that they are completely clean of silk etc.  In a small bowl, mix together all of the ingredients well into a nice paste.  With a brush, paint it onto each corn cob heavily. Place corn on grill for in-direct grilling, there will be flare ups if you don’t.  Turn them every minute until they are evenly browned….and gooey good.  The corn doesn’t take long to cook.  The charred outside just adds to the flavor.  Serve hot!
