Creamy Green Salsa Dressing

I order a lot of catering for my events at my day job and one caterer I love makes this signature dressing.  Thank you Chef Jack! I made this over the weekend for our Cinco De Mayo party over chopped Romaine leafs, fresh sliced tomatoes, avocados, crumbled queso cheese and sprinkled the salad with roasted shelled Pistachio nuts.  This dressing is da bomb!


 INGREDIENTS: 
1 large bunch of fresh cilantro
4 cloves of garlic
¼ cup olive oil
½ fresh squeezed lime juice
1 small can green chilies
½ cup Mayonnaise
1 teaspoon sugar (or Splenda for low carb version)
¼ teaspoon cayenne pepper
Salt and pepper

COOKING MUSIC SELECTION: THE OFFICIAL CINCO DE MAYO SONG

PREPARATION:
Wash the cilantro, peel the garlic and place all of the ingredients into a blender and blend until smooth.  Place in the fridge to chill for an hour.  Serve on anything!!!  Fish tacos, salad, great dipping sauce for anything !!!!
