Cheesy Low Carb Sausage Breakfast Muffins

Here is a low carb make ahead of time, grab and go yummy breakfast for continued weight loss on a HFLC lifestyle!!!!  It’s easy and fun to try different ingredients!  Here is the basic recipe, have fun!!!


INGREDIENTS: 
8 eggs
½ lb. sausage
1
cup cheddar cheese
½ cup grated Parmesan cheese
Salt and pepper
Add any veggies you want…. (In the photo here I added, onion, tomato, mushroom & zucchini)

COOKING MUSIC SELECTION: Birdy - Skinny Love

PREPARATION:

Brown and drain sausage. Beat eggs in bowl. Add meat, cheese, salt, pepper, and optional ingredients. Mix. Pour into greased full size muffin pan 2/3 full. Bake 350 degrees for 30 minutes. Use toothpick to check for doneness. Keep in a zip lock bag and refrigerate or freeze them and reheat in the microwave.
