Luscious Low Carb ~ Spicy Parmesan Chicken Strips

I have been really enjoying the LCHF (Low Carb High Fat) lifestyle and have been losing many pounds and inches so far eating this way. Click here for to learn from a handsome Swedish M.D. who can tell you the basics on low carb and high fat eating.  I finally have found a healthy way to eat and not go hungry or feel deprived.  I have been trying out new recipes and will start sharing them with you.  Here is one easy favorite so far:




INGREDIENTS: 
6 chicken breasts cut in to strips
¼ cup whipping cream
½ teaspoon Cayenne Pepper
1 teaspoon minced fresh parsley
2 eggs
½ cup Carbquik (A low carb Bisquick)
½ cup Parmesan Cheese
½ cup butter
½ cup olive oil

Serve with Low Carb Ranch Dressing or Low Carb Honey Mustard

PREPARATION:
In a bowl, whisk together cream and egg.  In another bowl, mix together Carbquick, Cayenne, Parsley and Parmesan cheese.  Melt butter and oil in a medium skillet, on medium heat.

Dip chicken breast strip in egg mixture, then in dry coating mixture. Place in hot melted butter in skillet.  Turn after bottom side is golden brown.  Cook second side until its golden brown.  This is even easier if you have a home deep fat fryer.  Who would have thought that eating so much fat would keep your insulin levels so low?  This is a great way to stay thin, healthy and happy!  ENJOY!
