OMG! This
side dish was a bigger hit than the main course! It is amazingly rich, but great for a special
occasion. You can do this on the grill,
but I did this in the oven. I modified this to be extra yummy. There is something magical about the Cinnamon, Cayenne and cream with the Sweet Potatoes, savory sweet and outrageous!
Bake
for 40 minutes at 400° (This can also be done on the grill, same way just close
the grill and check after 35 minutes) until fork tender with crispy cheese
browns on top. Let cool for 15 minutes before serving
INGREDIENTS:
4
large sweet potatoes, sliced into rounds
3
cups heavy whipping cream
1
teaspoon Cinnamon
¼
teaspoon of Cayenne Pepper
2
tablespoons butter
2 cups Colby cheese, shredded
1
Parmesan cheese, shredded
1
cup of Gruyere Cheese, shredded

PREPARATION:
Preheat
oven to 400° or BBQ grill for indirect grilling.
Coat
an 11" x 13" casserole dish with 1 tablespoon butter. Place a single layer of sweet potatoes at the
bottom of the casserole dish. Sprinkle a layer of cheeses. Continue layering
with the remaining potatoes and cheeses to fill casserole dish. Pour the cream over the layers and top with
remaining cheeses. Sprinkle with Cinnamon
and Cayenne Pepper.
