of spicy Italian sausage

can of organic crushed tomatoes
1 small
can tomato sauce

tablespoon olive oil
2 cloves
garlic, minced
1 large
onion minced
Tablespoon Freshly chopped Cilantro
½ teaspoon
Cayenne pepper
Coarse
salt and freshly ground pepper to taste
6 large
eggs
6 slices
toasted country bread, for serving
PREPARATION:
In a large
cast iron skillet, heat olive oil over medium-high heat. Add garlic and onion
and sausage; cook, stirring, until they are nice and browned. Add crushed tomatoes
and tomato sauce and bring to a boil; season with salt, pepper and Cayenne
pepper. Reduce heat to a simmer and cook for 20 minutes.
