This sauce is great on chicken, fish, seafood or grilled vegetables. The arugula is spicy, the cream, tart and freshness of this sauce is light yet flavorful.
1 cup baby spinach leaves
1 cup arugula leaves
½ cup shallots
¾ cup sour cream
½ teaspoon dill weed
1 teaspoon fresh lemon juice
3 tablespoons whole grain Dijon mustard
½ cup chopped & peeled cucumber
COOKING MUSIC SELECTION: Prince - Cream
Finely chop spinach, arugula, and shallot in your trusty blender. Add sour cream, lemon juice, dill and mustard; blend well. Transfer to medium bowl. Stir cucumber into sour cream mixture, season to taste with salt and pepper. This is yummy, I hope you enjoy it!
