Baileys Irish Cream Cookies

Joan Doyle my Irish friend from Pennsylvania loves “Sour cream cookies”, she turned me onto these over the holidays.  She and I made these tonight and we gave them a bad girl bbq spin.  They are light soft and cakeier then a regular cookie…with a hint of Irish cream….MMmmmmmm!  See, even the cookie dough was smiling.
 Many Irish coffees were consumed in the making of these, for some reason they just come out better that way.  ENJOY!

INGREDIENTS:
2 cups granulated sugar
1 cup butter, room temperature
3 eggs, well beaten
1/2 cup sour cream
Pinch of salt
1 tsp baking soda
½ cup Baileys Irish Cream
3 ½ cups flour

Green sugar sprinkles
  
COOKING MUSIC SELECTION:  Flogging Molly - Drunken Lullabies
 
PREPARATION:
Cream together sugar and butter, mix eggs and beat well until light and fluffy. Stir baking soda into the sour cream and add this, along with the eggs, to the creamed butter mixture and then last but not least add the Baileys.
Drop teaspoons of batter onto a greased cookie sheet and sprinkle with colored sugar. Bake in a 350°F preheated oven 10 to 12 minutes or until done.  Serve to your drunk Irish friends… goes great with Irish coffees.
