Chocolate Ganache & Peanut Butter Love Bombs

Lisa my dear friend's birthday is tomorrow and her request this year was "Peanut Butter & Chocolate Cake." We are all going out to dinner, so I decided on making her cupcakes. These are small rich, luscious and amazing. The surprise inside is a creamy peanut butter center, salty, sweet and dangerously addictive.

Here is how I made them.


INGREDIENTS:

Cupcake Cups
Cupcake Baking Tins
1 box of Duncan Hines Dark Chocolate Cake Mix
(Eggs, oil & water needed for the cake mix)
For Filling and Topping
2 cups of creamy Peanut Butter
1 cup Powdered Sugar
28 Small Reese’s Peanut Butter Cup candies
For Chocolate Ganache
1 medium bag Semi Sweet Chocolate Chips
¾ cup heavy cream
COOKING MUSIC SELECTION: You Sexy Thing (I Believe in Miracles) by Hot Chocolate

PREPARATION:
In a bowl make the box of cake mix according to the directions. Preheat your oven to 350 degrees. Place cupcake cups into the tins. Place a spoonful into each cup. In a separate bowl add, peanut butter and powdered sugar and mix thoroughly, spoon peanut butter filling mixture into the cups, on top of the cake batter. Then spoon the remaining cake batter on top of the peanut butter filling.
































Bake for 20 to 25 minutes. Take out and let cool. In a saucepan add the bag of chocolate chips and cream over medium heat. Dip each cupcake into the Ganache, let cool and dip them again to get them covered with a nice thick coating. In a pastry bag, add the remaining peanut butter filling to swirl a small dab in the top center of each cup cake, then decorate with the Candies.
