Tre's BBQ Oysters - Gourmet Compound Butters



Oysters are amazing on the grill. I’m not the best at shucking them, but that’s okay, I came up with some amazing fun compound butters that have transformed even some of the most hard core Oyster dislikers!

They are inexpensive and great to bring to a BBQ party… just make sure you buy them live and you have them hosed off and in a big cooler with ice when you keep them or need to transport them. I have experimented with all kinds of butters…. Try some of these out!

NOTE: These are good on many things besides Oysters!

INGREDIENTS:
65 Fresh Live Oysters any size
1 Blender
1 Roll of Wax paper or Saran Wrap
Twisty Ties
See Below for basic preparations.

Dangerously Good Compound Butters:

1) Patron Tequila, Garlic & Lime Butter:
2 Sticks of Sweet Butter
4 Tablespoons Patron Silver Tequila
5 Springs of Fresh Cilantro
4 Cloves of Garlic Peeled
The juice of 3 Limes

2) Rockefeller Butter:
2 sticks of sweet butter
6 tablespoons finely minced fresh spinach leaves
3 tablespoons finely minced onion
3 tablespoons finely minced parsley

1/2 cup grated Parmesan cheese
Tabasco Sauce to taste
1/2 teaspoon Pernod
The juice of 2 lemons
Top with fresh bread crumbs

3) Roasted Garlic, Parsley & Lemon Butter:
2 sticks of sweet butter
8 cloves of roasted Garlic
6 springs of fresh Italian Parsley
The juice of 3 Lemons

4) Red Thai Curry Butter:
2 sticks of sweet butter
1 Teaspoon of Red Thai Curry
4 tablespoons of Coconut Milk
3 springs of fresh Basil
1 fresh Thai Chili Pepper minced
1 teaspoon of sugar
The Juice of 2 Lemons

5) Beurre Blanc Butter:
2 sticks of sweet butter
1/4 cup of white wine
4 Tablespoons of white wine vinegar
2 tbsp finely minced shallots
(Saute them together with one stick of butter, set aside to cool, then blend them together with the other stick of butter)

6) Chive Butter Almondine:
2 sticks of sweet butter
3 Tablespoons of finely chopped Chives
2 cloves of fresh garlic minced
The juice of 2 Lemons
Top with Toasted Almonds

7) Absolut Citron Bechamel Butter:
2 sticks of sweet butter
1/4 cup
Basic Bechamel Sauce
3 Tablespoons Absolut Citron Vodka
The juice of 1 Lemon
1 Tablespoon Lemon Zest

8) Bearnaise Butter:
1 stick of sweet butter
1 cup of Bearnaise Sauce

9) Gorgonzola Butter:
2 sticks of sweet butter
1/2 cup crumbled Gorganzola Cheese
The juice of 1 Lemon

10) Asiago Basil Pesto Butter:
2 sticks of sweet butter
1 cup Grated Asiago Cheese
1/2 cup on Fresh Basil Pesto

11) Roasted Red Pepper Butter:
2 sticks of sweet butter
1 large Roasted Red Bell Pepper, Peeled, Seeded And chopped
2 Cloves of Garlic
Salt & Pepper to taste

12) Cocktail Shooter Butter:
2 sticks of sweet butter
6 tablespoons tomato ketchup
2 tablespoons fresh grated horseradish
3 Tablespoons of Absolut Pepper Vodka
The juice of 2 Lemons
celery salt to taste
A dash of Tabasco sauce

COOKING MUSIC SELECTION: The Rev. Al Green - Love and Happiness

PREPARATION:
Soften butter at room temperature and place in a food processor or blender. Add the ingredients to butter and blend them until almost pureed. With a long Spatula or spoon, scoop out the butter and place on a sheet of wax paper or plastic wrap. Roll up into a long tight tube and seal the ends with wire twists to seal tight. Place in the freezer overnight.

When making BBQ Oysters, fire up the grill on high. Place the whole fresh Oysters (that are closed completely) on the hot grill and cover. In 3 minutes check them, they should be popped open. With some long BBQ tongs take them off and with a pot holder protecting your hand, open the Oyster by prying off the top shell, leaving the meat inside on a convenient little oyster shell plate.

Slice a nice size of Compound butter and place it on top of the raw oyster and put it back on the grill open faced. Do this to all of them and cover the grill. In 5 minutes you have BBQ Amazing Oysters ready to serve in their own shell. YUMMY GOODNESS!

  1. Everything is excellent except.... Use Wellfleet Oysters, can't beat 'em!
